Valle d'Aosta cuisine is an experience that combines simplicity, authenticity and age-old traditions. Nestled in the Alps, Valle d'Aosta offers a gastronomy that exalts local products, often linked to sheep farming, mountain agriculture and wild herbs. The result? Rustic and genuine dishes, capable of recounting the territory in every bite.

The typical Valle d'Aosta lunch
A traditional Valle d'Aosta lunch often begins with a platter of local cured meats and cheeses. Fontina AOC, the queen of Valle d'Aosta cuisine, is served with black bread or rye tiles. Next, cured meats such as Lardo d'Arnad DOP or mocetta, a dried meat flavoured with mountain herbs.

As a first course, you cannot miss the soupe valdôtaine, such as cabbage soup with stale bread and fontina cheese, or the rich gnocchi alla bava, served with fontina cheese cream.

Meat dishes stand out among the main courses, such as roast pork knuckle, accompanied by strictly wholemeal polenta, or chamois stew. Let's not forget the carbonada, a beef stew marinated in red wine with spices.

Lunch ends sweetly with desserts such as tegole valdostane, thin crispy wafers, or mecoulin, a sweet bread similar to panettone.

To accompany everything, local wines from the area, such as Torrette Superiore DOC or Fumin, are the ideal choice.
