Aethos Monterosa offers gourmet cuisine in its Summit restaurant, open not only to Resort guests but also to those who want to delight in innovative and refined cuisine in a classy setting.

Inaugurated in July 2018, the Summit restaurant offers a mix of contemporary fusion cuisine with regional traits with Nordic Alpine influences but also international ones to be enjoyed in an elegant and evocative place, with warm tones and typical Aosta Valley decorations reinterpreted in a modern key.

This restaurant is the right choice for refined palates seeking exceptional food with surprising wine accompaniments. In fact, it is possible to choose the ideal wine pairing from the 800 international labels on offer, with a great deal of research focused on the Valle d'Aosta, national and French territories including Burgundy, Bordeaux, Loire and Champagne.
